Smoky Beef and Black Bean Chili

- 2 tablespoons olive oil
- 1 blood-red bell pepper roughly chopped
- ane orange or yellow bell pepper roughly chopped
- 1 poblano pepper roughly chopped
- 1 yellow onion roughly chopped
- 1 crimson onion roughly chopped
- 3 cloves garlic roughly chopped
- 2 tablespoons chili powder
- 1 pound ground beef
- 2 chipotle chilies finely chopped
- ii tablespoons adobo sauce
- 1 1/2 cups crushed tomatoes
- 1 cup beef stock
- one 16 ounce tin can of blackness beans drained and rinsed
- Kosher table salt and freshly croaky black pepper
Toppings
- Sour cream
- Shredded Cheddar Cheese
- Scallions
- Diced Avocado
- Cilantro
- Chives

In a big heavy lesser pot, add together the olive oil over medium loftier heat. Add the cherry-red and orangish bell pepper, poblano pepper and yellow and red onion and sauté for x-12 minutes until the vegetables get-go to cook down.
